- 1 Medium Ripe Avocado, Peeled & Cubed
- 2 Tbsp. Lemon Juice, Divided
- 2 Cups Cooked Chicken, Cubed or Shredded
- 2 Cups Seedless Red Grapes, Halved
- 1 Medium Tart Apple, Chopped
- 1 Cup Celery, Chopped
- 3/4 Cup Vanilla Greek Yogurt
- 1/2 Cup Walnuts, Toasted & Chopped
- 1/2 Tsp. Ground Ginger
- In a small bowl, toss avocado with 1 tablespoon lemon juice; set aside.
- In a large bowl, combine the chicken, grapes, apple, celery, yogurt, walnuts, ginger and remaining lemon juice.
- Stir in avocado. Serve on lettuce-lined plates if desired.
- Tip: You can easily replace the grapes with raisins or dried cranberries.
